You know at Slow Cook Sisters, we don’t steer far from the course of traditional cuisine.  Yet here we are dabbling in a fusion of 2 of the most delicious dishes to ever come out of Italy …Parmigiana di Melanzane and Lasagne!
Layers of roasted eggplant, homegrown tomato, basil, fresh ricotta and Parmesan, it is the best of all worlds.   We made it up as we went and couldn’t be happier with the finished product!   Squisito!
