ROAST PUMPKIN, SPINACH AND RICOTTA LASAGNE

Such a plain name for such a fabulous lasagne!   Between layers of  fresh Otway pasta, we have layers of spinach, herb and ricotta, a layer of roast pumpkin and sage and another  layer of sweet slow roasted red onions.     As it’s summer, we have made a lovely rich sauce of roasted seasonal tomatoes, garlic and basil (from our garden!).  We top it all off with grated Parmesan and mozzarella , all ready to bubble up in your oven . Too much information?  You should have just read the title!
