The charm of this Malay Nonya curry comes from it's aromatic fresh herbs and seasonings. The sauce is warmly spicy but not too hot, the tangy tomatoes and tamarind are softened nicely with the creamy coconut milk. Nonya Curry often has potatoes which I have omitted because they don't freeze well. You might like to mix through some cooked, diced, waxy potato when you reheat this curry.
