    Lovely, trimmed legs of lamb marinated in a Middle Eastern spice paste for 24 hours and then slow cooked in the oven until meltingly tender and dripping with beautiful roasting juices. Serve the shawarma with fresh cucumber and tomato salad, dressed with lemon juice, olive oil, garlic and chopped parsley.  Pile the lamb onto couscous, rice, bulgar or chargrilled pita bread.
