Tender slices of pork backstrap with a smoky herb crust, served in a rich Normandy-style sauce of apple cider, caramelised onion, Dijon mustard and thyme. The sweetness of apple and cider works beautifully with the savoury pork, while wholegrain mustard gives the sauce just enough bite.
