Large cuts of beef and pork cook low and slow for hours and hours in a rich Italian tomato sauce. When the meat is completely tender and falling apart, it is lightly shredded and tossed back through the sauce with fresh herbs. Heat your Ragú in your pan, add some almost cooked pasta with a little of the pasta water and let it all cook together. The luscious sauce will cling perfectly to the pasta, Pappardelle is the pasta of choice here.
